Another great southern comfort dish that can be cooked in the crockpot is this amazing chicken and dumplings recipe. The ingredients are a little bit more complicated than some of the others, but it’s definitely worth the effort. You’ll need chicken breasts, carrots, celery, butter, onion, all-purpose flour, salt, pepper, thyme, chicken broth, and frozen dumplings. But the end result is so hearty and delicious, your family will love it.
There are all sorts of stories and legends about the origin of chicken and dumplings. One popular tale is that a woman was cooking chicken in her crockpot, and the dumplings she was making happened to fall in. So she just put the lid on and let them cook together. And voila – the Crockpot Chicken and Dumplings dish was born!
But, we all know that chicken & dumplings has been around for much longer than Crockpots. It’s an old, traditional dish that has been enjoyed by many generations. There are all sorts of variations on the recipe, but the basics always include chicken and dumplings (hence the name).
There are probably a few reasons. For one thing, it’s really easy to make – especially in the Crockpot. And it’s also really hearty and comforting, perfect for a cold winter day. Plus, it’s affordable and everyone loves it.
It’s a dish that you can get started and then forget about, which is perfect if you have a busy day. The Crockpot will do all the work for you, and when you come home dinner will be ready. And who doesn’t love chicken and dumplings? So give this recipe a try – your family will love it!
– 1 lb. boneless, skinless chicken breasts
– 1 cup chopped carrots
– 1 cup chopped celery
– 1/4 cup butter
– 1 small onion, chopped
– 1/4 cup all-purpose flour
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/4 teaspoon dried thyme leaves
– 2 cups chicken broth
– 1 (16 ounce) package frozen dumplings
1. In a large crockpot, combine the chicken, carrots, celery, butter, onion, flour, salt, pepper, thyme, and chicken broth.
2. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
3. About 30 minutes before serving, prepare the dumplings according to the package directions. Add them to the crockpot and cook until tender.
You can serve this crockpot chicken and dumplings recipe with some green onions or parsley for garnish, if desired. We also like to make sweet yellow cornbread to go with it. Sometimes I’ll even make jalapeño cornbread for a little bit of heat.
There are about 353 calories in a serving of Crockpot Chicken and Dumplings. Most of those calories come from the chicken and dumplings themselves, but there is some fat and cholesterol from the butter as well. So if you’re watching your calorie intake, this might not be the best dish for you. But it’s still a pretty healthy Crockpot recipe overall.
